Avocado Quinoa Salad

I love the quinoa salad because it is light, delicious, and easy to make. Just chop the vegetables, cook the quinoa, toss everything together, pure the dressing and your meal is ready! Avocado Quinoa Salad is a simple and easy recipe for quinoa that can be served as a salad, side dish or even as a light dinner meal.

Yield: Serves 4


•  1 cup quinoa

•  5 tablespoons chopped fresh mint

•  1 ripe avocado, diced

•  2 tomatoes, diced

•  3 tablespoons lemon juice or more depends on your taste

•  2 tablespoons low sodium soy sauce

•  2 tablespoons extra-virgin olive oil

•  2 cups water

•  salt and pepper to taste


In a small saucepan, bring water to a boil. Add quinoa and give it a quick stir. Cover the saucepan, reduce heat to low and simmer for 15 minutes, or until the quinoa is tender and the water has been absorbed. Remove from heat and let stand 5 minutes. Then fluff with a fork. Allow it to cool to room temperature.

In a large bowl, combine quinoa, tomatoes, mint, and avocado.
In a small bowl, whisk together the olive oil, soy sauce, lemon juice, pepper and salt. Pour the dressing over the quinoa mixture and toss. Taste and adjust seasonings. Serve avocado quinoa salad at room temperature.
